If you’ve never heard of the Slow Carb diet, I’m not surprised. It’s not nearly as popular as the Paleo lifestyle, despite sharing some roots with it, but I blame that on the crazy cross-fitters, who get super excited about virtually everything they participate in. Cross-fitters eat paleo. Well, they kind of proselytize it, if we’re being honest. Slow carbers just do their thing.
Unlike when I attempted to do the paleo thing, I’ve found the slow carb diet far easier to negotiate. I don’t have to rely on nearly as much meat, thanks to the addition of legumes, and that one cheat day, every single week, is divine. It’s enough to keep me on task the rest of the week, knowing that I’m just 6, or 5, or 2, days away from being able to eat whatever I want. And trust me: I eat whatever I want. And I still get to lose the 30 or so pounds that never came off, after I had second little bundle of joy.
What I’ve had the hardest time with is taking my coffee black, which is why I was so thrilled to get the chance to try out Bulletproof Coffee again. Yes, again. Remember when I was going on about it in the spring? I was totally living my best life, slow carb-ing and feeling great. Then one night I fell asleep with my son lying on my chest, my neck all crunched up. The next thing I knew, one of my cervical discs did some kind of grotesque herniation that pinched a nerve in the middle of the night, that sent me to the ER thinking I’d had a heart attack.
But that’s another story.
The point is that I was slow carb-ing with Bulletproof coffee in my hand for a few weeks when my world came tumbling down. I loved it then, but it’s taken me nearly six months to get back in the saddle, thanks to the pain, the physio, the moving to a new home, and then the excess of summer. But September hit, and I committed.
I did my first few weeks of slow carb and found that the hardest part was fitting breakfast in. I love breakfast, but trying to cook it all up while I’m getting the kids ready, packing lunches, walking one kid to school and then driving the other to daycare? Disaster. When I made it a priority, we were late for everything else, and when I let it slip to the bottom of the list, I was shaky from hunger, by the time I was able to sit down and eat at 10am. To top it all off, I was in desperate need of coffee before I had time to eat, but black coffee on an empty stomach? BLECH.
And then Bulletproof coffee came back into my life.
If you don’t yet know what Bulletproof coffee is, let me explain: you take brewed Upgraded Coffee, blend it with unsalted grassfed butter and Brain Octane Oil, and you find yourself drinking magical coffee goodness. I’m serious. If you love a good latte, this will be the richest, creamiest one you’ve ever had. It’s divine.
I’m a bit of a coffee snob, generally getting locally roasted, single origin coffee beans, grinding them in our burr grinder and brewing them in our French press. I’m shocked at how fantastic the Upgraded Coffee tastes, but this is likely not only because of Bulletproof’s single origin coffee estates, but because they harvest and roast the beans by hand, and then test all beans for the presence of mold.
Mold?! On coffee?! I know. Apparently you can find mold in more than 50% of all brewed coffee. Gross, right? I get the impression that the lower the quality of the coffee, the higher the chance of there being mold. Makes me think twice about all those Tim’s double-double coffees I drank.
I really don’t understand the Brain Octane Oil, but I know it’s a form of medium chain triglyceride coconut oil that helps sustain you longer, boosting your metabolism and essentially making you superhuman. Just kidding. But it does help give your brain the energy it needs to function well, and that’s certainly something I notice, when I drink it.
Instead of a high buzz that ends in a crash, when I drink black coffee, the Bulletproof blend keeps me focused for longer. Yay, healthy fats! I don’t need to worry about eating a full, cooked breakfast to get me through to lunch; all I need is my Bulletproof coffee, along with a hard boiled egg and a few raw veggies in the mid morning, and I’m good until about 1pm.
Did I mention it tastes way better than black coffee? It does. Way, way better.
Any time I’ve talked to my friends about how amazing this stuff is, they’re always like, “But what if I don’t like it?” Starter kits, dude. They have budget-friendly starter kits that will give you the chance to try it for a few weeks to see how you feel.
